Barbecue Chicken Quesadillas

2 cups Cooked Chicken, diced or shredded

1 cup Barbecue Sauce

16 oz Shredded Cheddar, Cheddar Jack, or Mexican Cheese

4 large or 8 small Flour Tortillas

Butter or Non-Stick Spray

Toppings of your choice (Salsa, Sour Cream, Avocado, Guacamole…)

Pre-heat a large flat-bottomed pan over medium-low/medium heat. Mix barbecue sauce with chicken in a bowl. Melt a teaspoon of butter or spray pan with non-stick spray and place a tortilla in the pan. Add chicken in barbecue sauce and about 4 oz of cheese to the tortilla. Allow cheese to melt and tortilla to become golden brown. You may need to adjust the temperature to keep the quesadilla from browning too quickly while the cheese melts. Fold tortilla in half** and remove from heat. Serve with toppings of your choice.

**Tortillas can be made with a single, folded tortilla or by placing a second tortilla on top and flipping the entire thing. Allow to brown on the second side and remove from heat.
