Hamburger Soup
Ingredients:
1 lb Ground Beef*
1 bag of Frozen Mixed Vegetables (Green Beans, Carrots, and Corn)
4-5 Russet Potatoes
1 can of Fire Roasted Tomatoes
1-48 oz box Beef Broth
1 can Tomato Soup
1-15 oz can Tomato Sauce
2 tsp Chili Powder
1 tsp Cumin
1 tsp Garlic Powder
1 tsp Salt
1 tsp Dried Basil
1 tsp Dried Parsley
1 tsp Oregano
1 tsp Smoked Paprika
1 tbsp Yellow Mustard
1 tbsp Worcestershire Sauce
1 tbsp Apple Cider Vinegar
Cheddar Cheese, for topping
*You can also substitute any other ground meat, like turkey.
Instructions:
Heat a soup pot or dutch oven over medium heat. Add the ground beef (or turkey) and sauté until cooked through, using your spoon to crumble as it cooks. Alternatively, you can add 1 lb of leftover, cooked hamburger patties that have been crumbled into pieces. If using pre-cooked hamburger patties, add in step 4.
Peel the potatoes and cut into bite-sized pieces.
Add all ingredients, except the frozen vegetables, to the pot. Bring to a boil and then reduce the heat to low and allow to simmer for 15-20 minutes.
Add the frozen vegetables and cook for about 10 minutes more, or until the frozen vegetables are hot.
Ladle the soup into bowls and top with cheddar cheese.
