Bacon Fried Rice
Ingredients:
8 slices bacon
8 eggs
4 cups cooked rice, prepared according to package directions*
Instructions:
Fry bacon in a large frying pan. You can fry whole strips or cut with kitchen scissors into small pieces.
Remove when crisp and drain excess fat, leaving at least 3 tbsp. If frying whole strips, crumble bacon.
Add rice to bacon fat and sauté for about 5 minutes.
Beat eggs and pour over rice.
Add crumbled bacon and season with salt and pepper.
Stir all together until eggs are cooked through.
Serves 4 - 5.
Our mom always served with buttered toast and LOTS of pepper.
*Did your order chinese recently? This is a great way to use leftover rice.
This is brown rice because it’s what we had in the pantry. Use what you have or prefer!
Cook the bacon and remove from pan. Drain most of the fat, but leave a few tablespoons in the pan. Add the cooked rice and sauté for a few minutes. Watch out when you add it because the rice is wet and the bacon fat is hot.
Pour the beaten egg over the rice.
Then throw in the crumbled bacon.
Stir and mix as the egg cooks through.
Add salt and pepper and stir until the egg is cooked. If you like black pepper, go heavy with it. If you love carbs, serve with toast.
