*Some of the cheese this week is sold in smaller amounts than required for the recipe.  The recipe turned out fine, so rather than buying two packages to get an extra two ounces of parmesan, we just ordered one.

Tips for Getting Ahead

Saturday

  1. Print out all the recipes for the week. Click on the link provided and add groceries to your cart. 

  2. Look through the meal plan at the ingredients on the shopping list and the presumed ingredients.  If you do not have a pantry item, make sure to add it to your cart.  Add any other groceries to your online cart that you need for the week (cereal, bread, milk, etc). 

  3. Schedule a time to pick up your groceries tomorrow or have them delivered. 

  4. Read through the recipes and the “Tips for Getting Ahead” to prepare for the week. 

Sunday: 

  1. Preheat the oven to 375 degrees. Cook all the chicken for both Tuesday and Thursday by baking at 375 degrees for 20-30 minutes, or until internal temperature has reached 165 degrees.

  2. Make the lime crema for the carnitas bowls and place in a container labeled “Wednesday” in the fridge.

  3. Turn the oven up to 400 degrees and cook the spaghetti squash according to the recipe directions.  

  4. Cook the penne noodles according to the package directions, making sure to leave al dente as it will be cook more in the oven.

  5. Thinly slice the 2 bell peppers and 1 white onion for the fajita vegetables and place in container labeled “Wednesday” in the fridge.

  6. When the chicken is done and cooled, dice the chicken and place all but 2 cups in a container labeled “Tuesday”.  The remaining 2 cups of chicken will be added to a pasta meal we will freeze for Thursday. 

  7. Prepare the chicken alfredo bake according to the recipe directions, stirring in the frozen peas. I added about two cups of leftover pasta water to the mix since I was going to be freezing and thawing.  That helped prevent the casserole from drying out.  Cover tightly with foil and freeze for Thursday’s dinner

  8. Shred the squash after cooking and cooling and put it in a container labeled “Monday”.

  9. Wash, dry, and slice romaine lettuce.  We used a salad spinner; it also does a great job of keeping the lettuce fresh.  Store in the fridge for Tuesday night.  Any leftover romaine can be added to the carnitas bowl or a side salad can be added to any dinner!

  10. Chop cilantro for the cilantro rice on Wednesday.  Put in a container labeled “Wednesday”.

Monday:

  1. Million Dollar Spaghetti Squash casserole can be made in a smaller dish than the recommended 9 x 13, but may need to bake longer.   

Tuesday:

  1. Consider storing extra vegetables from tonight’s salad to use in carnitas bowls tomorrow.

  2. Get a crockpot ready for cooking carnitas in the morning.  *Set an alarm to remind yourself to turn the crockpot on in the morning.

Wednesday:

  1. Take the frozen Chicken Alfredo bake out of the freezer in the morning and thaw in the refrigerator for tomorrow’s dinner.

  2. Store extra carnitas meat in the fridge for Friday’s BBQ sandwiches.
