Oreo Truffles
I make these around the holidays to give away and they are always the favorite!
INGREDIENTS:
1 - 8oz package cream cheese, softened
1 - 14.3oz package Oreos
12 oz white chocolate (chips or bars)
INSTRUCTIONS:
Finely crush Oreos in food processor or by hand.
Fold cookie crumbs into the softened cream cheese until thoroughly combined and no streaks of cream cheese remain.
Line a sheet pan with parchment paper or a silicon baking mat.
Roll into 1 inch balls and place on sheet pan. I typically use a small scoop to portion and then go back and roll them into smooth balls.
Melt white chocolate in a heat-proof bowl for 15 second bursts in the microwave until just melted.
Drop balls one at a time into the white chocolate. Use a fork to coat the entire ball and then lift out, letting excess drip off. I like to gently tape the fork against the bowl to remove as much excess chocolate as possible.
Use another fork or a toothpick to place the truffle on the baking sheet. Repeat until all the of the balls have been dipped. Refrigerate for about 30 minutes until the white chocolate is set.
You can add decorations before the white chocolate sets: sprinkles, chocolate pieces, oreo crumbs. I like to zig zag melted white and dark chocolate across the top.
I like to use my food processor to get the crumbs nice and small. I also do it in batches because my food processor is small.
I mixed these by hand, but a hand mixer would make quick work of it!
Roll into approximately tablespoon-sized balls. I got 56 truffles, but you can get more or less depending on the size of your balls.
