Tex Mex Salad

Ingredients:

2 heads Romaine Lettuce, chopped

1 can Black Beans, rinsed and drained

1 cup Corn, thawed if frozen or drained if canned

1-2 Tomatoes, chopped

1/2 large or 1 small Red Onion, thinly sliced

8 oz Cheddar, Colby Jack, or 4-Cheese Mexican Cheese, shredded

1 Avocado, cubed

Tortilla Strips

Chipotle or Southwest Ranch Dressing

Instructions:

Assemble all ingredients and top with dressing. You can add grilled chicken if you want something heartier. Makes 4 large dinner-size portions.
